I consider this soup a great find. Outside of a little sauteeing, everything is placed in the crockpot and simmered for 3 or more hours. I usually throw in an extra can of minced clams, and you could even add more potatoes if you like a heartier soup. Enjoy!
Ingredients
3 cans of cream of potato soup
2 cans of New England clam chowder
1 can minced clams (I usually use 2)
1 qt half and half
1 stick butter
1 medium onion diced
Note-
Potato (optional)
Instructions
Melt the butter and saute the diced onions in the butter for about 5 minutes.
Drain the minced clams and save the juice. If using 2 cans of clams separate the juice.
Add the clams to the butter and diced onions and saute for 15 minutes.
Place the cans of soup, clams, butter, onions, ½ & ½ and clam juice in the crockpot.
Add the diced potato if using.
Gradually add the clam juice to preferred thickness.
Simmer on low for 3 or more hours.
