Mike's 3 Egg Pasta Recipe

Ingredients
  • 3 eggs
  • 2½ cups flour
  • ¾ teaspoon salt
  • General measurement - ¾ cup of flour for every egg
Instructions
  1. Combine flour and salt.
  2. Place the flour and salt mixture on the counter and make a well in the center of the flour.
  3. Add the eggs.
  4. Begin to mix the eggs with your fingers gently adding the flour until a dough begins to form.
  5. Fold and press the dough until stiff dough forms and is no longer sticky.
  6. Knead the dough 8-10 minutes.
  7. Separate dough into 4 pieces.
  8. Run each piece through the pasta machine or you can roll by hand.
  9. The pasta can be cooked immediately, stored for several weeks or frozen up to 3 months.
  10. Cook pasta in a rolling boil, al dente - firm to bite, approximately 4 minutes.
  11. If freezing, dust with semolina flour to avoid sticking.
