Paneer Cheese and Fresh Herb Hors d'oeuvres

This cheese is easy to make and is used in traditional Indian and Pakistani cuisine. I first saw the recipe on Jennifer Pallian's blog, foodess.com
Ingredients
  • 12 cups whole milk
  • ¼ cup lemon juice
  • pinch of salt to taste
Instructions
  1. Heat milk in a large pot until it comes to a boil
  2. Remove from heat and add lemon juice.
  3. Stir for about 30 seconds and the milk will begin to curdle. If it doesn't, add another tablespoon of lemon juice.
  4. Let stand for 10 minutes.
  5. Pour into a cheesecloth-lined colander.
  6. When most of the liquid is drained, rinse with cold water. This gets rid of the lemon taste.
  7. Pick up the corners of the cloth and twist into a ball squeezing out as much of the moisture as possible.
  8. Open and stir in a dash of salt and add more if you like.
  9. Wrap up again and twist the cloth to the side and flatten into an oval shape.
  10. Place on a paper towel-lined plate and flatten with the twist to the side.
  11. Add a weight. I used a skillet filled with canned goods.
  12. Allow the paneer to drain with weight for 20 minutes.
  13. Remove the weight and cloth and the cheese is ready to use.
