Wild and Healthy Mushroom Soup

- 3 tablespoon of unsalted butter
- 1 cup carrots, sliced
- 1 cup celery sliced
- 1 cup onions sliced
- 4 large garlic cloves chopped
- 2-3 teaspoons fresh thyme leaves
- 2 pounds of mushrooms cleaned and sliced (for this recipe I used button mushrooms)
- 6 cups chicken broth
- 1 teaspoon salt
- pepper to taste. I use fresh ground pepper
- Melt butter in a large pot.
- Add carrots, celery, onions, and garlic.
- Cook until tender and do not brown. Approximately 10 minutes.
- Add thyme, mushrooms, chicken broth, salt and pepper. Heat until a soft boil and then lower heat, cover and simmer 30 minutes.
- Remove from heat and serve.
