Chili Chicken Stew has become a family favorite and is even expected at certain times of the year. Think of this stew like a welcoming pot of LOVE that’s on your stove ready for anyone who enters. It’s healthy, most of the ingredients are in your cabinet and it takes a minimal amount of time to assemble. Easy Assembly
I’m hoping that the pictures help depict just how easy this recipe is to make. The vegetables and the chicken are sautéed in the oil (a minimal amount I might add) and then the tomatoes, beans, and seasonings are added. It’s really just that easy.
Stew or Soup?
So, you are wondering why it’s titled stew. Well, me too. A stew is a combination of meat and vegetables cooked in a liquid usually for a long period of time. Stews can be thickened with flour or cornstarch (reduction) which gives the liquid a consistency of gravy. Usually the not so tender cuts of meat are used because the slow cooking will make them tender. This post is made exactly to the recipe. You’ll see that it is thick and I didn’t add anything to make the juice like gravy.
Now for my tweaks. When I make this recipe, I make it like a soup. I double the tomatoes, the beans, and the seasonings. Well, to tell you the truth, I don’t really measure anything. I think about how many I will be serving and gage it from there. I cover the chicken breast, onions and garlic with water and boil. When the chicken is cooked I add the additional tomatoes, beans and seasonings. What you will have is a thinner, more soup like liquid/juice. This recipe gives you a great base that you can work with and that’s what I love about it. Changes can be made depending on the amount of people you will be serving, the seasonings you like and even the cut of meat. A whole chicken could also be used for this recipe. It’s just that versatile.

- 6 chicken breast, skinned and boned. I use skinless, boneless chicken breasts.
- 1 medium onion chopped.
- 1 medium green pepper chopped
- 2 cloves of garlic minced
- 1 tablespoon of oil
- 2 cans (14½ oz each) chopped stewed tomatoes undrained.
- 1 15 oz can of pinto beans drained
- ⅔ cup Picante sauce
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1½/ teaspoon salt
- Cut chicken into 1-inch pieces.
- Saute chicken, onion, green pepper and garlic in the tablespoon of oil. I use my dutch oven.
- Add the stewed tomatoes, pinto beans, Picante sauce, chili powder, cumin, and salt.
- Simmer until thoroughly heated and serve.
- To make more like a soup, just add additional tomatoes, beans and your spices.
- This is a great recipe to make for a group.
