I have to confess that I love a little crunch on my yogurt or ice cream. Grabbing a box of cereal to top a bowl of ice cream is what I call – a little taste of heaven! Now that Tom and I have been empty nesters for quite some time, the row of cereal boxes is non-existent in our pantry. Tom has transitioned away from a bowl of Raisin Bran for breakfast which is a healthy choice and I’m very proud of him. Every once in a while, a cereal box appears for a recipe. You know, the snack crackle and pop type. Truly a weakness.
So, my quest for crunch is on. I begin with granola because I love having something just a little sweet and crunchy in the house because that’s who I am and I want to create rustic loaves of bread which often have an added topping.
Cranberry Granola Crunch
The simplicity of this recipe will have you not only making your own fresh granola but experimenting with your favorite flavors. The main ingredients in addition to the oatmeal are cranberries and pecans. You can grab what’s in your cabinet and make it your own. Butter, sugar, and strawberry preserves are cooked until blended and then added to the nuts and oatmeal. The mixture is then baked.
The granola comes out of the oven soft, the cranberries are added and then it dries on a cookie sheet. It’s just that simple and it’s fab!
Making homemade anything is fun and now you can add granola to your list of “I can do this”. Just like the Gourmet Crackers, I posted a few weeks back, you can switch out some regular store bought items for homemade freshness. I love it!!!

- ½ cup butter
- ⅓ cup sugar
- ⅓ cup strawberry preserves
- 2 cups rolled oats (uncooked)
- ¾ cup coarsely chopped nuts
- 1 cup dried cranberries or raisins
- Preheat oven to 325 degrees F.
- Combine butter, sugar, and preserves in a 3 quart suacepan.
- Cook over low heat stirring constantly until well blended.
- Remove from heat.
- Add rolled oats and nuts.
- Mix until the dry ingredients are evenly coated.
- Spread the mixture into a 13 X 9 ungreased baking pan and bake 35 to 40 minutes stirring occasionally.
- Remove the granola from the oven and stir in the cranberries.
- Spread the mixture onto an ungreased cookie sheet and cool completely.
- The granola will become crispy as it cools.
- Store in tightly covered containers.
